The Stuffed Mac n Cheeseburger takes your love of mac n cheese, and cheeseburgers to the next level! Top it off with thick cut bacon and more mac n cheese and you're in food heaven! Making the macaroni and cheese from scratch allowed us to put the right amount of cheese that we love.

Ingredients

  • 16 Oz. Elbow Noodles
  • 8 Cups Water
  • 2 tbsp unsalted Butter
  • 2 Tbsp All-Purpose Flour
  • 2 Cups Whole Milk
  • 2 Cups American Cheese (as slices or smaller chunks)
  • 1/2 Cheddar Cheese, Shredded
  • ½ Tsp Salt (Salt To Taste)
  • 4 ¼ Lb 80/20 Ground Beef (Less If Desired)
  • 1 ½ Cup Mac & Cheese
  • 2 Slices Thick Cut Bacon
  • 2 Tbsp Mayonnaise
  • ½ Tsp Salt
  • ½ Tsp Pepper
  • 2 Slices American Cheese

Directions

  1. Prepare the Macaroni & Cheese on stovetop by bringing 8 cups of water to a boil in medium/large pot, add a pinch of salt.
  1. Once water is boiling, add elbow noodles and continue to cook at a boil for 8 minutes, or until the noodles are soft.
  1. Drain water and set noodles aside.
  1. In a medium sized pot, over medium heat, melt the butter.
  1. Once butter is melted, slowly stir in the flour, and continue for about 30 seconds until a paste is created (roux), and the mixture is a light brown.
  1. Slowly stir in the milk.
  1. As the roux begins to thicken, begin adding cheese slowly, breaking slices and stirring in.
  1. As the cheese melts, continue to add the American cheese, followed by the cheddar cheese.
  1. Once the cheese sauce is to your desired consistency (once it begins to stick to a spoon, for example), reduce heat, and add the elbow noodles to the sauce.
  1. Mix until evenly coated.
  1. Prepare the stuffed burgers by utilizing the Pit Boss 3-in-1 Burger Press. Place one ¼ lb piece of ground beef in the bottom of the press, and with your hand, ensure the meat is even across the bottom, reaching the walls of the press. Use the inside portion of the press to create a cavity in the meat. Once a cavity is created, fill the cavity with a small portion of mac & cheese. Place a second piece of meat over the mac & cheese, and using the fully capped portion of the press, firmly press down on the top piece of meat until the stuffed burger is sealed. Remove the burger from the press. Repeat for all burgers.
  1. Turn one burner of the griddle on to medium/low heat. Cook bacon on griddle to desired doneness (about 3-4 minutes per side).
  1. Pull bacon from the griddle, and place on paper towels to drain excess grease.
  1. Using some of the bacon grease left on the griddle, place the stuffed burgers on the griddle, turning griddle to medium heat (if the griddle is cooking hot, leave at medium/low setting).
  1. Add salt, pepper, and Pit Boss Bold Burger Rub to the burgers (if only adding to one side, apply liberally, or to desired taste)
  1. Cook on first side for 4-5 minutes.
  1. While burgers are cooking, spread mayonnaise on the inside of the buns, and place face down on the griddle for about a minute to toast the buns.
  1. Pull buns from the heat and set aside.
  1. Flip the burger and cook an additional 4-5 minutes or until burger is to desired doneness (medium to well done recommended).
  1. Place one slice of American cheese on each burger.
  1. Once cheese is melted and the burger is cooked through, pull and place on bottom bun.
  1. Top the burger with bacon, 1 tbsp of macaroni and cheese (or load it up!).
