Whether you're packing lunch for a busy work or school day or stocking up on easy dinners for the family, you can prep all your favorite griddled foods ahead of time on the Pit Boss, without so much as turning on the stove or oven!

Ingredients

  • 4 whole eggs
  • 5 lb. pre-cooked pulled or cubed chicken
  • 8 cups of day old steamed rice
  • 24 oz frozen peas & carrots
  • 1/2 cup Soy Sauce
  • 10-12 oz oyster sauce

Directions

  1. First, preheat your Pit Boss Griddle to medium-high heat, and scramble 4 whole eggs.
  1. Then, add your pre-cooked chicken (or protein of choice) and rice and sauté for 4 to 5 minutes.
  1. Next, add peas and carrots and sauté for an additional 4-5 minutes.
  1. Add soy and oyster sauce, and sauté for an additional 4-5 minutes.
  1. Then, remove the fried rice from the griddle and allow it to cool completely before portioning into your meal prep containers of choice.
  1. You can store this meal prep recipe in the refrigerator for 3-5 days, reheating as needed.
  1. To reheat, place the fried rice into the microwave and reheat for 1-2 minutes uncovered, in a microwave-safe container.

Recipe Note

Cool down: To help your fried rice cool faster, try placing it into a shallow pan, allow to cool to room temp stirring occasionally, then place in the fridge uncovered until 40°F or less.
