These bossin' cheese stuffed pork chops with potato are a whole meal rolled into one! Loaded with gooey cheddar cheese and hash browns, sour cream and more! A hearty and decadent meal, these chops are sure to be a hit at your next barbecue or tailgate!

This stuffing forgoes the usual breaded variety for a gluten free option by using hash browns. If you have an air fryer handy, feel free to fry them up before adding them to the stuffing a little extra crunch when you bite into your pork chops!

Ingredients

  • 4 bone-in pork chops
  • 1 Tbsp Parsley, Minced Fresh
  • 1 Cup Shredded Cheddar Cheese
  • White Onion, Diced
  • 1 package frozen shredded hash browns, thawed
  • 1/4 cup Sour Cream

Directions

  1. Place the pork chops on a flat work surface. Using a sharp knife, cut a pocket into the side of each pork chop, being careful not to cut all the way through the sides of the chop. Season the pork chops generously on both sides with Pit Boss Homestyle Pork Rub.
  1. In a large mixing bowl, mix together the hash browns, shredded cheddar, sour cream, diced onion, parsley, and 1 tablespoon of Homestyle Pork Rub. Stuff each pork chop with about ¼ cup of the potato filling. Use a toothpick to securely close the chop if needed.
  1. Fire up your Pit Boss and set the temperature to 350°F. If you're using a gas or charcoal grill, set it up for medium heat. Insert a temperature probe into the thickest part of one of the chops and place the meat on the grill. Grill the chops on one side for 10-15 minutes, then flip and grill for another 10-15, or until the internal temperature of the chops reach 145°F.
  1. Remove the chops from the grill, take the toothpicks out of the meat, and serve immediately.
